We harvested our grapes on Tuesday, Sept 10, 2019. This Bordeaux blend of Cabernet Sauvignon, Petit Verdot, and Malbec was inoculated with a Bordeaux yeast the next day. Here is a short video of a punch down from yesterday. The primary fermentation is likely to be completed in 7 to 10 days.
With our invited guests Trixie knows to remain shy and playful. Then when she senses a threat near the ranch, she morphs into beast mode. It’s hard to imagine a better livestock guardian than Trix, our 8-month old Great Pyrenees. Gentle when you want her to be, a gladiator when she needs to be.
